As you could see in the facebook page of Happy Belly 2012 (click to see it), I published photos of different cupcakes that I made this weekend. They are three different flavors and I am going to publish in next days..

Start with chocolate cupcakes's recipe. I used the recipe of the Betty Crocker's book (This book was given me for my family in my birthday) but with some differences...(I need to add a little of milk in the cupcakes because they will be more spongy and I like them more!!!)

Ingredients:
  • 250gr flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 150ml milk
  • 150gr de butter/shortening o 200ml oil (I prefer to use oil)
  • 300gr sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • Melted chocolate (You can use the quantity that you want but with half tablet is enough)

How to make them:
  • Preheat oven to 350ºF (180ºC).
  • In a bowl, mix flour, baking powder and salt; set aside.
  • Heat in a double boiler the chocolate; set aside.
  • In other bowl, whisk eggs with the sugar.
  • Add oil, milk and the vanilla. Whisk everything again.
  • When everything is mixed, add the mixer of flour, baking powder and salt. Whisk and add the melted chocolate.
  • Put the paper cups in the pan and fill each about 2/3 full.
  • Finally, put the pan in the oven during 20-25 minutes until they are golden brown.

Ingredients for the Cream Cheese Buttercream:
              • 150gr cream cheese (like Philadelfia)
              • 60gr butter (Ambiente temperature)
              • 300gr powdered sugar
              • 1 teaspoon of milk
              • Wilton's gel pink (or the colour that you want)

How to make the Cream Cheese Buttercream:
              • Beat butter with powdered sugar and the teaspoon of the milk.
              • Add the cream cheese (cold) and whisk everything together.
              • Dye the mix with pink colour, I used this colour because I like the combination of chocalate and pink.
              • Decorate the cupcakes with the tips that you want and we can add sprinkles.
If you remember, I made chocolate bars the other day so I used them to decorate these cupcakes too.

I hope you like them!! Greetings.
